Empire State Trio: New York Strip with Steamed Asparagus and Oven-Roasted Potatoes

You will need:

  • 2 Grazen NY strip steaks

  • Potatoes of your choice (we used fingerling potatoes)

  • 1 bunch of asparagus

  • Cooking oil of your choice

  • Garlic powder

  • Paprika

  • Rosemary

  • Salt

  • Chili powder

  • Beef rub/steak seasoning of your choice (we used Traeger brand)

  • 1 1/2 cups of water

  • InstantPot for the asparagus (optional)

Instructions:

  1. Preheat oven to 425°F (218°C)

  2. Wash your fingerling potatoes with water and then cut them into bite-sized pieces

  3. Place the potatoes evenly across a baking sheet and drizzle with the cooking oil of your choice

  4. Season with garlic powder, paprika, and rosemary to taste, then roast in the oven until golden brown and crispy (about 25 minutes)

  5. Season your Grazen New York strip steak generously with salt, paprika, chili powder, and your favorite steak seasoning (we used Traeger Beef Rub)

  6. Sear the steak in a hot skillet for 5-6 minutes over medium heat and finish it in the oven at 350°F (149°C) for 6 minutes- depending on the thickness of the steak

  7. While the steak is finishing in the oven, chop off about 2 inches from the bottom of the asparagus stocks.

  8. Drizzle with oil and toss/roll until they are completely covered in oil, then sprinkle with salt to taste

  9. Add 1 1/2 cups of water to your InstantPot, and steam for 4 minutes.

  10. Serve the perfectly cooked New York strip steak alongside the vibrant asparagus and the flavorful roasted potatoes for a meal that is sure to impress!
